Tilapia Fillets with Parmesan, Basil and Tomato

Serves 4 |
A wonderful fish dish with Italian flavors.
Ingredients:
2 tablespoons fresh lemon juice |
2 teaspoons grated lemon peel |
2 teaspoons olive oil |
4 tilapia fillets |
1/2 teaspoon salt |
1/4 teaspoon lemon-pepper seasoning |
3 tablespoons shredded Parmesan cheese |
3 tablespoons chopped fresh basil |
1 can diced tomatoes, drained, 15 oz. |
Directions:
- Heat oven to 400 degrees F.
- Coat a 2 qt. glass baking dish with cooking spray.
- Place lemon juice, lemon peel and olive oil in a shallow dish; stir to combine. Place tilapia in shallow dish and turn to coat.
- Transfer tilapia to glass baking dish. Sprinkle tilapia with salt, lemon-pepper, Parmesan and basil. Spoon diced tomatoes over tilapia. Cover dish with foil and bake until fish flakes easily with a fork, about 15 to 20 minutes.
