Tilapia Fillets with Parmesan, Basil and Tomato

Serves 4 | 

A wonderful fish dish with Italian flavors.

Ingredients:

2 tablespoons fresh lemon juice
2 teaspoons grated lemon peel
2 teaspoons olive oil
4 tilapia fillets
1/2 teaspoon salt
1/4 teaspoon lemon-pepper seasoning
3 tablespoons shredded Parmesan cheese
3 tablespoons chopped fresh basil
1 can diced tomatoes, drained, 15 oz.

Directions:

  1. Heat oven to 400 degrees F.
  2. Coat a 2 qt. glass baking dish with cooking spray.
  3. Place lemon juice, lemon peel and olive oil in a shallow dish; stir to combine. Place tilapia in shallow dish and turn to coat.
  4. Transfer tilapia to glass baking dish. Sprinkle tilapia with salt, lemon-pepper, Parmesan and basil. Spoon diced tomatoes over tilapia. Cover dish with foil and bake until fish flakes easily with a fork, about 15 to 20 minutes.
