Curried Cauliflower Soup

Serves 8 |
Highly flavorful and so easy to prepare.
Ingredients:
2 tablespoons olive oil |
1 yellow onion, chopped |
1 1/2 tablespoons sugar |
4 teaspoons curry powder |
8 cups chopped cauliflower florets |
1 1/4 cups gold potatoes, peeled and diced into cubes |
7 cups chicken broth |
Salt, to taste |
Ground black pepper, to taste |
Directions:
- Heat a heavy large pot over medium-high heat. Pour in olive oil. Once hot, add chopped onion and saute for about 5 minutes. Pour in sugar and curry powder and stir for 1 minute. Add cauliflower and potatoes and stir for 1 minute.
- Pour in chicken broth and bring to a boil. Reduce heat to medium, cover, and let simmer for about 35 minutes. Remove pot from heat.
- Working in batches, pour soup into a blender and puree. Transfer pureed soup into a second pot. Once all soup is pureed, bring the pot to a simmer.
- Season with salt and pepper. Ladle soup into serving bowls and enjoy.
