Date, Oatmeal and Walnut Cookies

Hearty, yummy and fun to make.
Ingredients:
2 cups flour |
1 tablespoons ground cinnamon |
1 teaspoon baking soda |
1 teaspoon salt |
3/4 cup unsalted butter |
1 cup sugar |
1 cup packed dark brown sugar |
2 whole eggs, plus 1 egg yolk |
3 tablespoons milk |
2 teaspoon vanilla extract |
1/2 lb dates, chopped |
2 1/2 cups old-fashioned rolled oats |
2 cups walnuts, coarsely chopped |
Directions:
- Preheat an oven to 375° F. Grease 2 baking sheets with cooking spray.
- Sift together the flour, cinnamon, baking soda and salt into a mixing bowl.
- Place the butter in a separate mixing bowl. Using an electric mixer set on high speed, beat butter until light and fluffy. Beat in the granulated sugar and brown sugar. Add the whole eggs, egg yolk, milk and vanilla and beat until light and fluffy. Reduce the speed to low, add the flour mixture and mix just until incorporated. Mix in the oats, dates and walnuts.
- Scoop out cookie batter with a spoon. Arrange cookies on baking sheets. Bake for 12-15 minutes. Let cool on the baking sheets for 1 minute.
