Gingered Turkey Salad

Serves 4 | 

Highly flavorful and very easy to prepare.

Ingredients:

2 cups chopped cooked turkey breast
1 can pineapple chunks, drained, 8 oz.
1/2 cup chopped celery
1/4 cup chopped green onions
1/2 cup mayonnaise
1 tablespoon honey
1 teaspoon ground ginger
1/4 teaspoon ground black pepper
1/2 red bell pepper, cut into strips

Directions:

  1. Combine mayonnaise, honey, ginger and black pepper in a mixing bowl to make dressing. Stir together well.
  2. Toss together turkey, pineapple, celery, and green onions to dressing in a salad bowl.
  3. Add dressing to salad and toss to coat. Cover with plastic wrap and chill for 30 minutes in the refrigerator.
  4. Spoon salad onto serving plates. Top with red pepper strips and enjoy!
