Mediterranean Chicken Wrap

Serves 4 |
Delicious, easy to make and healthy.
Ingredients:
1/2 cup plain yogurt |
3 cloves garlic, minced |
1/2 teaspoon dried dill |
Salt, to taste |
1 1/2 lb chicken breast, skinless, boneless |
1 tablespoon olive oil |
1 teaspoon chili flakes |
1 teaspoon ground black pepper |
1 1/2 teaspoon dried mint |
Ground black pepper, to taste |
4 tortillas |
Hummus, to taste |
1 cup chopped cabbage |
1 avocado, pitted and chopped |
1 tomato, chopped |
1 cup cooked broccoli |
Directions:
- Add the yogurt with 1 garlic clove, dill and a pinch of salt. Mix until smooth. Set aside.
- Chop the chicken in bite-sized pieces. Place in a medium pan and drizzle the olive oil over top. Bring to medium-high heat. Add, chili flakes, black pepper, dried mint, and the remaining garlic. Stir to coat the chicken. Cook for 8-10 minutes, until the chicken is golden brown.
- Spoon hummus down the middle of each tortilla. Add an equal amount of the chicken to each tortilla. Drizzle the yogurt sauce over top. Add equal amounts of the cabbage, avocado, tomato, and broccoli to each tortilla. Fold in one end and roll up. Enjoy!
