Cheesy Black Bean Quesadilla

Serves 10 |
A vegetarian dish that’s a little spicy but also sweet.
|10 flour tortillas|
|2 cups shredded cheese|
|2 1/4 tablespoons butter|
|3 1/2 tablespoons onion, finely cut|
|1 1/4 can whole kernel corn, drained|
|1 1/4 can black beans, drained|
|1/4 teaspoon red pepper flakes|
|2 1/2 teaspoons olive oil|
|1/4 cup salsa, more for serving|
|1 1/4 tablespoon brown sugar|
- In large saucepan, heat oil on medium. Add in onion, stir for 2 minutes. Add corn and beans, salsa, pepper flakes, and sugar. Cook for 3 minutes.
- Melt butter in skillet and lay tortilla in skillet. Sprinkle cheese on tortilla and add bean mix to skillet. Place another tortilla on top and cook. When bottom tortilla is golden brown, flip and cook again to golden brown.
- Add butter as needed and repeat process. Cut in half and serve with salsa!
