Chili-Lime Roasted Chicken

Serves 2 | 

Simple, seasoned and scrumptious.

Ingredients:

1 lime
1 jalapeno pepper, (seeded and minced)
Salt, (to taste)
1 teaspoon fresh cilantro, (chopped)
2 chicken breasts
1 teaspoon chile powder
2 cloves garlic, (grated)
1/2 cup olive oil

Directions:

  1. Preheat oven to 350° F.
  2. Cut lime in half. Cut one of the halves into thin slices. Set slices aside. Zest and juice the remaining half.
  3. Combine jalapeno, salt, cilantro, chile powder garlic, olive oil, lime slices, lime juice and lime zest in a mixing bowl, transfer to resealable bag.
  4. Place chicken breasts in bag. Coat evenly and let marinate for 15 minutes.
  5. Remove chicken from bag. Place chicken in baking dish. Pour marinade over chicken. Bake for 60-75 minutes.
