Chili-Lime Roasted Chicken

Serves 2 |
Simple, seasoned and scrumptious.
|1 jalapeno pepper, (seeded and minced)|
|Salt, (to taste)|
|1 teaspoon fresh cilantro, (chopped)|
|2 chicken breasts|
|1 teaspoon chile powder|
|2 cloves garlic, (grated)|
|1/2 cup olive oil|
- Preheat oven to 350° F.
- Cut lime in half. Cut one of the halves into thin slices. Set slices aside. Zest and juice the remaining half.
- Combine jalapeno, salt, cilantro, chile powder garlic, olive oil, lime slices, lime juice and lime zest in a mixing bowl, transfer to resealable bag.
- Place chicken breasts in bag. Coat evenly and let marinate for 15 minutes.
- Remove chicken from bag. Place chicken in baking dish. Pour marinade over chicken. Bake for 60-75 minutes.
