Easy Southern Corn Bread

A classic side that's always welcome at the dinner table.

Ingredients:

2 1/2 cups yellow cornmeal
1 1/2 cups flour
1 teaspoon baking power, plus 1 tablespoon
1 teaspoon salt
2 cups milk
6 tablespoons unsalted butter, melted
2 eggs, beaten

Directions:

  1. Preheat oven to 375° F.
  2. Butter a 9 x 13-inch baking dish.
  3. In a large bowl, mix together the cornmeal, flour, baking powder, and salt. Make a well in the center of the mixture then add milk, melted butter, and eggs. Mix until just combined. Pour into buttered baking dish; smooth top with the back of a spoon.
  4. Bake for about 25 to 30 minutes, until golden, and when a toothpick inserted into the middle comes out clean.
  5. Cool for 5 minutes before cutting.
