Easy Southern Corn Bread

A classic side that's always welcome at the dinner table.
Ingredients:
2 1/2 cups yellow cornmeal |
1 1/2 cups flour |
1 teaspoon baking power, plus 1 tablespoon |
1 teaspoon salt |
2 cups milk |
6 tablespoons unsalted butter, melted |
2 eggs, beaten |
Directions:
- Preheat oven to 375° F.
- Butter a 9 x 13-inch baking dish.
- In a large bowl, mix together the cornmeal, flour, baking powder, and salt. Make a well in the center of the mixture then add milk, melted butter, and eggs. Mix until just combined. Pour into buttered baking dish; smooth top with the back of a spoon.
- Bake for about 25 to 30 minutes, until golden, and when a toothpick inserted into the middle comes out clean.
- Cool for 5 minutes before cutting.
