Two-Cheese Jalapeno Quesadillas

Serves 4 |
|1/2 cup grated Cheddar cheese|
|1/2 cup grated Monterey Jack cheese|
|1/4 cup chopped pickled jalapenos|
|4 flour tortillas, 8-inch|
|Diced avocado, as garnish, optional|
|Sour cream, as garnish, optional|
- Preheat broiler.
- Lay two tortillas on working surface. Combine cheeses in a bowl. Sprinkle cheeses and jalapenos on the two tortillas. Place the last two tortillas on top to create quesadillas. Transfer to a baking sheet.
- Place baking sheet in oven and broil quesadillas for 2-3 minutes, flip and broil for additional 2-3 minutes, until the cheese has melted and the tortillas are crisp and golden brown.
- Cut quesadillas into wedges. Top with diced avocado and sour cream, and enjoy.
