Barbecued Ribs with Chipotle

Serves 4 |
Ingredients:
3 lb. pork baby back ribs, cut into 2-rib sections |
1/2 cup barbecue sauce |
2 tablespoons chipotle peppers in adobo sauce, chopped |
2 tablespoons orange marmalade |
Directions:
- Prepare grill for medium heat.
- Mix barbecue sauce, chipotle peppers and marmalade together in a small bowl; set aside.
- Place ribs in a large pot then add enough cold water to completely cover ribs. Place lid on pot and bring to a boil. Reduce heat to a simmer (medium-low) and cook ribs for 20 minutes. Drain.
- Place ribs on the grill and cook, turning occasionally and brushing generously with the barbecue sauce mixture, for about 10 minutes or until cooked through to 160 degrees F.
