Creamy Greek Yogurt Macaroni Salad





Serves 6 |
A lighter and tastier version of this classic dish.
Ingredients:
| 4 radishes, sliced thin |
| Salt, to taste |
| 1/2 lb elbow macaroni |
| 1 tablespoon mayonnaise |
| 2 tablespoons finely chopped dill pickle |
| 2 hard boiled eggs, egg whites chopped, yolk left whole |
| 2 stalks celery, sliced thin |
| 1 cup plain Greek yogurt |
| Ground black pepper, to taste |
Directions:
- Cook macaroni according to directions. Drain water and return pasta to pot.
- Mash 1 egg yolk with fork in a mixing bowl. Add lemon juice, Greek yogurt and mayonnaise to bowl. Stir ingredients together until smooth.
- Add egg mixture to pasta, stir together. Add celery, egg whites, dill pickle and radishes to pasta. Stir together. Season with salt and pepper and enjoy!
