Tomato and Chickpea Salad





Serves 8 |
Light, flavorful and great for many occasions.
Ingredients:
| 1 pint grape tomatoes, halved |
| 1 can chickpeas, drained and rinsed, 15.5 oz. |
| 3 cloves garlic, minced |
| 2 teaspoons avocado oil |
| 1/2 tablespoon honey |
| 1 tablespoon apple cider vinegar |
| 1 tablespoon red wine vinegar |
| 1/2 teaspoon salt |
| 8 fresh basil leaves, chopped |
Directions:
- Place the grape tomatoes, chickpeas, minced garlic, avocado oil, honey, apple cider vinegar, red wine vinegar, salt and basil leaves in a large bowl. Stir together until well incorporated.
- Cover and place in the refrigerator. Let chill for at least 30 minutes.
- Toss together before serving and enjoy!
