Stir Fried Shrimp Pad Thai

Serves 4 | 

Delicious, simple, and filling.

Ingredients:

6 oz rice noodles
2 tablespoons canola oil
1 lb uncooked shrimp, peeled, deveined, 16-20 count
3 cloves garlic, minced
1 white onion, chopped
1 egg, lightly beaten
6 green onions, thinly sliced
3 cups coleslaw mix
1/3 cup rice vinegar
5 tablespoons soy sauce
3 teaspoon chili garlic sauce
1/4 cup sugar
Salted peanuts, for garnish
Chopped cilantro, for garnish

Directions:

  1. Cook the rice noodles according to package directions.
  2. Pour canola oil into a large skillet or wok, bring to medium heat. Once hot, add the shrimp and cook for 5-7 minutes, until slightly pink. Remove the shrimp and set them aside.
  3. Add the garlic and white onion to the skillet or wok and cook for 2-3 minutes, until the onions start to become translucent.
  4. Push the garlic and onion to the side and place the egg into the center. Cook for 2-3 minutes, until egg is set. Then stir until mixed.
  5. Add the green onions, coleslaw mix, rice vinegar, soy sauce, chili garlic sauce and sugar. Stir until well combined.
  6. Add the shrimp back into the skillet or wok and stir together.
  7. Add the noodles and stir to combine.
  8. Garnish with salted peanuts and chopped cilantro. Enjoy!
