Creamy Red Pepper Alfredo





Serves 4 |
A deliciously easy vegetarian option.
Ingredients:
1/2 cup raw cashews |
1/2 cup water |
1 red bell pepper |
1/2 teaspoon ground turmeric |
1/8 teaspoon ground nutmeg |
2 teaspoons onion powder |
1/4 cup nutritional yeast |
1 teaspoon sea salt |
16 oz spaghetti |
Directions:
- Soak the cashews in a bowl of water for 6-8 hours. Drain fully, and pat dry.
- Pour the cashews, water, red bell pepper, turmeric, nutmeg, onion powder, nutritional yeast, and salt into a food processor. Pulse and blend until smooth.
- Pour the sauce into a pan. Bring to medium-low heat. Keep warm while the spaghetti cooks.
- Cook the spaghetti according to the package directions. Drain the water. Transfer the spaghetti to a large bowl.
- Pour the sauce over the spaghetti. Stir together until the spaghetti is well coated.
- Divide among serving plates. Enjoy!
