Roasted Salmon With Lemon Thyme Crust





Serves 8 |
This roasted salmon dish is sure to become a new favorite.
Ingredients:
1/2 cup chopped fresh parsley |
1/4 cup grated parmesan cheese |
1/4 cup chopped fresh thyme |
4 lb salmon fillets |
2 teaspoons grated lemon peel |
1/2 teaspoon salt |
3 cloves garlic |
2 cups bread crumbs |
4 tablespoons unsalted butter, melted |
Directions:
- Preheat oven to 350° F.
- Place parsley, parmesan cheese, thyme, garlic, lemon peel and salt into a food processor. Process mixture until fine. Transfer to a bowl.
- Add bread crumbs and 3 tablespoons melted butter to bowl and mix well.
- Grease a shallow baking dish and place salmon into the dish.
- Brush the salmon with remaining melted butter, and cover with the bread crumb mixture.
- Roast the fish for about 25 minutes.
