Serves 6 |

A full flavored Italian style meal.

Ingredients:

For Chicken Parmesan:
6 small boneless skinless chicken breasts, or 3 large, cut in half
2 tablespoons olive oil
Salt, to taste
1 jar marinara sauce, 24-oz.
1/3 cup grated Parmesan cheese
3/4 teaspoon dried basil
1 cup shredded mozzarella cheese
8 oz. shell pasta, or your favorite pasta
For Roasted Garlic Bread:
1 loaf Italian bread
1 head garlic
1 tablespoon olive oil
1/2 cup butter, softened
1 tablespoon chopped fresh parsley
2 tablespoons Parmesan cheese

Directions:

  1. Drizzle a large skillet with olive oil; heat over medium-high heat. Season chicken breasts with salt & pepper. Add chicken to skillet; cook 2 to 3 minutes on each side until browned. Set chicken aside on a plate. (The chicken will not be cooked all the way through; that's ok.)
  2. Remove skillet from heat for 1 to 2 minutes to allow to cool. Reduce temperature to medium-low. Once skillet has cooled a bit, add marinara sauce, Parmesan cheese, and basil. Stir to combine.
  3. Nestle chicken breasts into sauce mixture; cover, and simmer 10 minutes until chicken is cooked through. Meanwhile, preheat oven to broil. If using an oven-safe skillet, top chicken pieces with mozzarella cheese, and broil 3 to 4 minutes until golden and bubbly.
  4. If not using an oven-safe skillet, transfer chicken along with sauce to a baking dish. Cover with mozzarella cheese, and broil 3 to 4 minutes until golden and bubbly.
  5. For Roasted Garlic Bread:
  6. Preheat oven to 350° F.
  7. Slice the tops off the garlic cloves so that the tip of each clove is exposed. Drizzle with olive oil and wrap with foil. Roast for about 30 minutes; let cool 5-10 minutes.
  8. Slice the loaf in half horizontally. Heat the oven to broil.
  9. In a small bowl, Remove skins from 4 cloves of garlic. Stir in the butter, parsley and parmesan cheese until well-blended. Spread onto the cut sides of the bread. Broil 4-5 minutes, until bread is toasted.
