Hatch Chile Stew





Serves 6 |
A little spicy with a whole lot of flavor.
Ingredients:
| 8 hatch chiles, peeled, roasted and chopped |
| 2 lb boneless pork, cut into small cubes |
| 1 cup broth, chicken or beef |
| 1 jalapeno pepper, chopped |
| 4 tomatoes, peeled and chopped |
| 2 tablespoons olive oil |
| 2 cloves garlic, minced |
| 1 teaspoon salt |
| 1/2 teaspoon pepper |
| 1/4 cup flour |
| 1/2 teaspoon sugar |
| 1 onion, chopped |
Directions:
- Pour olive oil into a Dutch oven. Bring to medium-high heat. Add pork and cook until lightly browned. Add garlic, onion and flour to Dutch oven. Cook and stir for 2 minutes.
- Add jalapeno, tomatoes, hatch chiles, salt, pepper and sugar to Dutch oven. Stir together. Add broth. Lower heat to simmer and cook for 60-90 minutes.
