Mashed Sweet Potatoes with Maple Syrup





Serves 8 |
A yummy twist on the classic dish.
Ingredients:
| 3 1/2 lb sweet potatoes, peeled and cut thick slices |
| 4 tablespoons unsalted butter |
| 1/3 cup pure maple syrup |
| Salt, to taste |
| Ground black pepper, to taste |
| Cold water |
Directions:
- Place sweet potatoes in a Dutch oven. Add cold water to cover and 1 teaspoon salt. Turn burner to high, cover Dutch oven and bring water to a boil. Uncover and cook potatoes for about 10 minutes more, until potatoes are very soft. Drain potatoes in a colander.
- Return potatoes to Dutch oven. Add butter and maple syrup and salt and black pepper to taste; mash or beat potatoes until desired consistency is reached. Serve hot.
