Pomegranate Glazed Salmon





Serves 4 |
Savory and sweet with a hint of tartness.
Ingredients:
| 1/2 cup pomegranate juice |
| 1 clove garlic, minced |
| 2 tablespoons soy sauce |
| 4 salmon fillets |
| Pomegranate arils, for garnish |
Directions:
- Preheat oven to 400° F. Line a baking sheet with parchment paper.
- Combine pomegranate juice, minced garlic and soy sauce in a mixing bowl. Stir together until well combined.
- Place salmon fillets in a large rimmed dish. Pour pomegranate mixture over top and cover with a lid or aluminum foil. Let marinate for 15 minutes.
- Place the salmon skin-side down on the baking sheet. Place the baking sheet into the oven and bake for 6 minutes.
- Pour the marinade into a saucepan and bring to medium-high heat. Cook for about 5 minutes, stirring frequently, until thickened and syrupy.
- Remove the baking sheet from the oven and drizzle half of the pomegranate glaze over top. Return to the oven and bake for an additional 6 minutes.
- Transfer glazed salmon to serving plates. Drizzle the remaining pomegranate glaze over the tops of the salmon, top with pomegranate arils and enjoy!
