Cajun-Style Orzo and Kidney Bean Skillet

Serves 4 |
A wholesome and hearty meal that's exceptionally tasty.
Ingredients:
2 tablespoons olive oil |
1 green bell pepper, diced |
1 red bell pepper, diced |
1 yellow onion, diced |
1 jalapeno, diced |
3 cloves garlic, diced |
1/2 teaspoon ground black pepper |
1 teaspoon smoked paprika |
1 teaspoon dried oregano |
1 tablespoon Cajun seasoning |
1 1/2 cups vegetable broth |
3 Roma tomatoes, crushed |
1 1/4 cup orzo |
1 can kidney beans, drained and rinsed, 15 oz. |
1 can green chiles, 4 oz. |
Directions:
- Heat the olive oil in a pan over medium heat. Once hot, add the green and red bell peppers, yellow onion, jalapeno, garlic, black pepper, smoked paprika, oregano and Cajun seasoning. Cook for 5 minutes stirring often.
- Add the vegetable broth, crushed tomatoes, orzo, kidney beans and green chilies to the pan, stir to combine. Bring to a boil, cover with a lid, set to low heat and simmer for 20 minutes.
- Transfer to serving plates and enjoy!
