Hummus Avocado Sandwich





Serves 2 |
A delightful, veggie packed sandwich.
Ingredients:
1/2 avocado |
1/8 teaspoon kosher salt |
2 tablespoons plain hummus |
8 slices cucumber |
8 slices tomato |
1/2 cup broccoli sprouts |
4 slices bread |
Directions:
- Mash the avocado in a bowl with a fork. Sprinkle salt over the avocado. Mash a little more.
- Divide the avocado among two slices of bread.
- Spread the hummus equally on the other two slices of bread.
- Arrange the cucumber and tomato slices on top of the avocado. Place the broccoli sprouts on the hummus. Combine the two to create the sandwich. Enjoy!
