Citrus Dijon Marinated Chicken





Serves 4 |
Tart, sweet and herbaceous.
Ingredients:
| 4 boneless skinless chicken breasts |
| 8 tablespoons orange juice |
| 3 tablespoons lemon juice |
| 2 tablespoons lime juice |
| 2 tablespoons Dijon mustard |
| 1/2 cup olive oil |
| 1 teaspoon Herbs de Provence |
| 1 teaspoon finely chopped fresh oregano |
| 1 teaspoon finely chopped fresh thyme |
| 1 teaspoon garlic powder |
| 1 teaspoon salt |
| 1/4 teaspoon crushed red pepper flakes |
Directions:
- Whisk together the orange juice, lemon juice, lime juice, Dijon mustard, olive oil, Herbs de Provence, oregano, thyme, garlic powder, salt, and crushed red pepper flakes in a mixing bowl. Set aside 1/4 cup of the marinade. Keep in the refrigerator until ready to use.
- Place the chicken breasts in the marinade. Coat evenly. Cover and place in the refrigerator to chill for at least 1 hour.
- When ready to cook, bring a large pan to medium heat. Once hot, place the chicken breasts in the pan. Brush half of the reserved marinade over the chicken and cook for 5-7 minutes, until lightly brown. Flip and brush the chicken breasts with the remaining marinade. Cook for 5-7 minutes.
- Transfer the chicken breasts to serving plates. Enjoy!
