Pineapple Chicken Rice Casserole





Serves 6 |
Fun, flavorful and easy to prepare.
Ingredients:
3/4 cup chicken broth |
1/2 cup soy sauce |
1/2 cup brown sugar |
2 teaspoon minced garlic |
1 can pineapple tidbits in juice, undrained, 20 oz. |
1 1/2 cups uncooked instant white rice |
1 red bell pepper chopped |
1/2 cup diced red onion |
1 lb boneless skinless chicken breasts, cubed |
Diced cooked bacon, for garnish |
Directions:
- Preheat oven to 425° F. Grease a large baking dish with cooking spray.
- Whisk together the chicken broth, soy sauce, brown sugar, and garlic in a large mixing bowl.
- Pour the entire can of pineapple tidbits into the mixing bowl. Add the uncooked rice, red bell pepper, and red onion, stir together. Then add the chicken, toss to coat.
- Pour the contents of the mixing bowl into the baking dish. Cover with aluminum foil. Place into the oven to bake for 50 minutes. Remove the foil and stir. Return the baking dish to the oven to bake for an additional 10 minutes.
- Remove from the oven and let rest for 5 minutes before serving. Top with the diced bacon. Cut into six servings and enjoy!
