Cherry Balsamic Glazed Chicken

Serves 4 | 

A restaurant-quality meal in 30 minutes.

Ingredients:

4 boneless, skinless chicken breasts
Salt, to taste
Black pepper, to taste
1/2 teaspoon dried thyme
2 cloves garlic, finely minced
1 cup cherries, pitted, halved
1/4 cup balsamic vinegar
2 tablespoons honey

Directions:

  1. Generously season both sides of the chicken breasts with salt and black pepper. Then sprinkle with the dried thyme. Set aside.
  2. Add the garlic, cherries, balsamic vinegar, and honey to a medium saucepan. Bring to medium heat. Cook for 8-10 minutes, stirring occasionally, until the cherries soften. Remove from heat.
  3. Bring a heavy skillet to medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 6 minutes. Flip and cook for 4 minutes, then brush the cherry balsamic glaze generously onto the chicken. Cook for 3 minutes, undisturbed.
  4. Remove the skillet from the heat. Allow to rest for 3 minutes.
  5. Transfer the chicken to serving plates. Spoon any remaining glaze over the chicken. Enjoy!
