One-Pot Philly Cheesesteak Soup with Bacon





Serves 4 |
The perfect comfort food soup.
Ingredients:
| 1 yellow onion, diced |
| 2 cloves garlic, minced |
| 1 green bell pepper, thinly sliced |
| 1 lb beef steak, thinly sliced |
| 6 cups beef broth |
| 1 cup heavy cream |
| 1 cup shredded provolone cheese |
| Salt, to taste |
| Black pepper, to taste |
| 6 slices bacon, cooked and crumbled |
Directions:
- Bring a large pot to medium heat. Melt the butter. Add the diced onion. Cook and stir until the onions become translucent. Add the garlic and bell pepper. Stir until the garlic becomes fragrant. Then stir in the sliced beef. Allow to sit for a few minutes to sear.
- Pour in the beef broth and bring to a gentle simmer.
- Reduce the heat to low and slowly stir in the heavy cream. Then gradually add the shredded provolone cheese, stirring regularly until creamy.
- Season the soup with salt and pepper. Ladle into bowls and top with crumbled bacon. Enjoy!
