Broiled Salmon and Tomatoes

Serves 4 |
In less than 30 minutes you can put a fresh, healthy salmon dish on the table.
Ingredients:
4 6 oz. pieces salmon fillet, skinless |
4 tomatoes, cut in half, crosswise |
1/2 teaspoon paprika |
2 tablespoons olive oil |
3/4 teaspoon kosher salt |
1/4 teaspoon black pepper, freshly ground |
4 cloves garlic, sliced |
8 sprigs fresh thyme |
Directions:
- Place salmon and tomatoes, cut side up, in a broiler-roasting pan. Sprinkle salmon with paprika.
- Drizzle salmon and tomatoes with olive oil then season with salt and black pepper. Randomly place garlic and thyme atop salmon and tomatoes.
- Broil for about 8 to 10 minutes, until salmon is opaque throughout and tomatoes are tender.
