Simple Sweet Potato Biscuits





Serves 16 |
A tasty twist on the classic biscuit recipe.
Ingredients:
2 cups flour, more for flouring surface |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 tablespoon sugar |
5 tablespoons unsalted butter, chopped |
1 cup pureed cooked sweet potatoes |
1/3 cup milk |
Directions:
- Preheat the oven to 400° F. Coat baking sheet with cooking spray.
- Pour flour into a mixing bowl. Add baking powder, salt and sugar. Mix together.
- Using a hand mixer, slowly add in butter. Blend until mixture looks like coarse meal.
- In a separate bowl, combine sweet potato puree and milk. Stir until mixed. Add puree mixture to the flour mixture. Stir just until moist.
- Turn the dough out onto a lightly floured surface. Roll dough to about an inch thickness and cut into 10 biscuits. Gather remaining dough and roll out to make 6 more biscuits.
- Place biscuits onto baking sheet.
- Place in oven and bake for 15 minutes or until lightly browned.
- Transfer biscuits from pan to wire racks. Cool on wire racks for 5 minutes.
