Simple Sweet Potato Biscuits

Serves 16 | 

A tasty twist on the classic biscuit recipe.

Ingredients:

2 cups flour, more for flouring surface
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
5 tablespoons unsalted butter, chopped
1 cup pureed cooked sweet potatoes
1/3 cup milk

Directions:

  1. Preheat the oven to 400° F. Coat baking sheet with cooking spray.
  2. Pour flour into a mixing bowl. Add baking powder, salt and sugar. Mix together.
  3. Using a hand mixer, slowly add in butter. Blend until mixture looks like coarse meal.
  4. In a separate bowl, combine sweet potato puree and milk. Stir until mixed. Add puree mixture to the flour mixture. Stir just until moist.
  5. Turn the dough out onto a lightly floured surface. Roll dough to about an inch thickness and cut into 10 biscuits. Gather remaining dough and roll out to make 6 more biscuits.
  6. Place biscuits onto baking sheet.
  7. Place in oven and bake for 15 minutes or until lightly browned.
  8. Transfer biscuits from pan to wire racks. Cool on wire racks for 5 minutes.
