Rotisserie Chicken Vegetable Soup





Serves 6 |
Simply scrumptious!
Ingredients:
| 1 rotisserie chicken |
| 8 cups chicken broth |
| 1 tablespoon butter |
| 1 teaspoon Herbes de Provence |
| 2 carrots, peeled and chopped |
| 1 onion, chopped |
| 1 rib celery, chopped |
| 1 cup broccoli, chopped |
| 1 cup peas |
| 1 cup spinach, chopped |
| 1 cup cooked rice |
| Salt, to taste |
| Ground black pepper, to taste |
Directions:
- Remove all the meat from chicken and place the meat in a container. Set aside.
- Bring a large pot to medium-low heat. Add butter, Herbes de Provence, carrots, onion and celery. Cook for 10 minutes, stirring occasionally. Add the chicken broth and simmer for an additional 15 minutes.
- Add broccoli, peas, spinach, rice and chicken. Return to a simmer and cook until the ingredients are warmed through. Season with salt and pepper.
