Yummy Sweet Potato Cakes





Serves 12 |
A deliciously easy side dish.
Ingredients:
2 sweet potatoes, peeled and cut into cubes |
1 jalapeno chili, seeded and finely chopped |
3 green onions with tops, thinly sliced |
2 cloves garlic, minced |
1 teaspoon brown sugar |
1/4 teaspoon allspice |
1/3 cup vegetable oil |
Salt, to taste |
Ground black pepper, to taste |
Directions:
- Place the sweet potato cubes in a pan and fill with enough water to cover. Bring to a boil and cook for about 10 minutes, until sweet potatoes are softened. Drain and place the potatoes in a mixing bowl and mash.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Once hot, place jalape�?�±o, green onions and garlic in the skillet. Cook and stir for 5 minutes, until the vegetables are soft.
- Add the vegetables to the mashed sweet potatoes. Sprinkle brown sugar, allspice, salt and pepper over top and stir together.
- Form the sweet potato mixture into 12 cake patties.
- Heat the remaining oil in the skillet over medium-high heat. Place the sweet potato cakes in the skillet. Cook, turning once, until golden brown on each side.
