Yummy Sweet Potato Cakes

Serves 12 | 

A deliciously easy side dish.

Ingredients:

2 sweet potatoes, peeled and cut into cubes
1 jalapeno chili, seeded and finely chopped
3 green onions with tops, thinly sliced
2 cloves garlic, minced
1 teaspoon brown sugar
1/4 teaspoon allspice
1/3 cup vegetable oil
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Place the sweet potato cubes in a pan and fill with enough water to cover. Bring to a boil and cook for about 10 minutes, until sweet potatoes are softened. Drain and place the potatoes in a mixing bowl and mash.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Once hot, place jalape�?�±o, green onions and garlic in the skillet. Cook and stir for 5 minutes, until the vegetables are soft.
  3. Add the vegetables to the mashed sweet potatoes. Sprinkle brown sugar, allspice, salt and pepper over top and stir together.
  4. Form the sweet potato mixture into 12 cake patties.
  5. Heat the remaining oil in the skillet over medium-high heat. Place the sweet potato cakes in the skillet. Cook, turning once, until golden brown on each side.
