Sweet Coconut Rice





Serves 4 |
A great side dish to many meals.
Ingredients:
| Cooking oil, for cooking rice |
| 1 can coconut milk, 13.5 oz. |
| 1 cup jasmine rice |
| 1 cup vegetable broth |
| Salt, to taste |
| Ground black pepper, to taste |
Directions:
- Pour a small amount of cooking oil into a saucepan and bring to high heat. Once hot, add jasmine rice and saute 1 minute.
- Add coconut milk and broth to the pan. Season with salt and pepper and bring to a boil. Turn down heat to low, cover with a lid and let simmer 20 minutes.
- Turn the heat off and keep the lid on and cook for an additional 10 minutes.
- Fluff the rice with a fork and spoon onto serving plates.
