Grilled Mango Chicken





Serves 4 |
Turn up the heat and the sweetness.
Ingredients:
4 boneless skinless chicken breasts |
1 cup cubed mango |
1 tablespoon brown sugar |
1 tablespoon fish sauce |
1 tablespoon Sriracha sauce |
3 tablespoons lime juice |
3 cloves garlic, minced |
1/2 teaspoon kosher salt |
2 tablespoons canola oil |
Directions:
- Combine the mango, brown sugar, fish sauce, Sriracha sauce, lime juice, garlic, kosher salt and canola oil into a blender. Pulse until well blended and smooth. Pour 1/4 of the marinade into a bowl, cover and place in the refrigerator.
- Place the chicken breasts into a sealable container. Pour the remaining mango marinade over top. Flip chicken to evenly coat. Place the lid on top of the container and then transfer to the refrigerator to chill for at least 4 hours.
- Preheat the grill to medium heat.
- Remove the chicken from the container and discard marinade. Place the chicken breasts on the grill and cook for 10 minutes and flip. Cook for an additional 10 minutes. Transfer chicken breasts to a plate and cover with aluminum foil.
- Remove the reserved marinade from the refrigerator. Pour the marinade into a saucepan and add 1/4 cup of water. Bring the pan to medium-high heat and let simmer for 5 minutes.
- Place the chicken breasts on serving plates, drizzle the mango sauce over top and enjoy!
