Garlic Butter Smashed Sweet Potatoes





Serves 12 |
Crispy on the outside, tender on the inside.
Ingredients:
4 sweet potatoes, quartered |
Olive oil spray |
3 tablespoons melted butter |
1 tablespoon chopped fresh parsley |
4 cloves garlic, crushed |
Kosher salt, to taste |
Cracked black pepper, to taste |
2 tablespoons parmesan cheese |
Directions:
- Preheat oven to broil.
- Fill a pot with water and bring to a boil. Place sweet potatoes into the water and boil for 25 minutes. Drain water.
- Lightly grease a baking sheet with olive oil spray. Arrange sweet potato quarters on the baking sheet. Use a fork to lightly flatten each quarter. Set aside.
- Stir together melted butter, parsley and garlic in a small bowl.
- Generously brush smashed sweet potatoes with the melted butter mix and sprinkle the salt and pepper over top. Lightly spray the olive oil spray over each sweet potato.
- Place the baking sheet into the oven and broil for 15 minutes. Remove the baking sheet from the oven and sprinkle parmesan cheese over the tops of each sweet potato. Return to the oven and broil for a few minutes, until the cheese has melted.
- Remove from the oven, let cool for a few minutes and enjoy!
