Avocado Bacon and Egg Breakfast Sandwich





Serves 4 |
Breakfast just got a whole lot tastier!
Ingredients:
Olive oil spray |
8 eggs, beaten |
Salt, to taste |
Ground black pepper, to taste |
4 bagels |
4 slices bacon, cooked |
4 tomato slices |
1 avocado, sliced |
Directions:
- Heat a large nonstick skillet over medium heat, spray with olive oil.
- Crack eggs and scramble until they are just set. Season with salt and pepper. Set aside.
- Split bagels in half and lay face up. Layer the eggs, bacon, tomato and avocado atop the bottom bagel slice. Place the top half of the bagel on top of the avocado to complete the sandwich and enjoy!
