Baked Salmon with Tarragon and Bacon

Serves 4 |
Uniquely delicious and complex.
Ingredients:
6 tablespoons butter |
1 yellow onion, finely chopped |
1/4 teaspoon dried tarragon |
2 slices bacon, diced |
2 tablespoons lemon juice |
4 salmon fillets |
Directions:
- Pre-heat the oven to 400° F. Place a piece of aluminum foil into a large baking dish.
- Place butter in a pan and bring to medium heat. Once the butter has melted, add the yellow onion and cook for a few minutes, until softened and golden. Add the tarragon and bacon to the pan and cook for an additional 2 minutes. Spritz lemon juice over top and stir together.
- Place the salmon fillets in the baking dish. Pour the onion mixture over top. Place a second piece of aluminum foil over the salmon and pinch the edges shut. Place into the oven and bake for 15-20 minutes.
