Delectable Lobster Scampi





Serves 4 |
Ingredients:
1 lb linguini |
3 tablespoons olive oil |
5 tablespoons butter |
1 cup chardonnay |
3 tablespoons anchovy paste |
4 scallions, diced |
2 green onions, chopped |
10 button mushrooms, chopped |
1 red bell pepper, chopped |
1 lb lobster meat, cut into bite-sized pieces |
10 basil leaves, torn |
Salt, to taste |
Ground black pepper, to taste |
Cayenne pepper, to taste |
1/2 cup grated Parmesan |
Directions:
- Fill a pot with water, bring to a boil and cook linguini until al dente. Drain water. Turn heat off and pour 1 tablespoon of olive oil over the pasta and toss to coat. Set aside.
- Pour 2 tablespoons of olive oil and butter to a skillet. Bring to medium-high heat. Once hot add garlic and saute for 1 minute. Pour in the chardonnay and anchovy paste, cook and stir for 6 minutes.
- Add the scallions and green onions, cook for 5 minutes.
- Add the mushrooms and red bell pepper, cook for 2 minutes, stirring frequently.
- Add the lobster and basil to the linguini. Sprinkle cayenne pepper, salt and black pepper over the linguini. Turn heat to lowest setting and warm linguini. Sprinkle half of the grated Parmesan cheese over top and stir together thoroughly. Remove from heat.
- Spoon an equal amount of lobster scampi onto four serving plates. Sprinkle the remaining grated Parmesan over each dish and enjoy!
