Sweet Chili Shrimp with Asparagus

Serves 4 | 

Sweet, spicy and ready in 30 minutes.

Ingredients:

1 lb raw shrimp, peeled
1/2 cup Thai sweet chili sauce
2 tablespoons Sriracha sauce
1/4 cup soy sauce
2 cloves garlic, minced
2 teaspoons sesame oil
1 bunch asparagus, rinsed and trimmed
2 tablespoons olive oil
Kosher salt, to taste
Ground black pepper, to taste
Cooked rice, for serving
Green onion, chopped for garnish

Directions:

  1. Preheat the oven to 400° F.
  2. Place the shrimp into a resealable container.
  3. Pour the Thai sweet chili sauce, Sriracha sauce, soy sauce, minced garlic and sesame oil into a mixing bowl. Stir together until well combined. Drizzle the sauce over the shrimp and place into the refrigerator to chill.
  4. Place asparagus on one half of a large rimmed baking sheet. Drizzle 1 tablespoon of olive oil over the asparagus. Season with salt and pepper.
  5. Place the baking sheet into the oven to cook for 5 minutes. Remove from the oven.
  6. Drizzle the other tablespoon of olive oil on the other half of the baking sheet. Place the shrimp on the baking sheet. Return the baking sheet pan to the oven and cook for an additional 10 minutes.
  7. Separate rice into 4 serving bowls. Transfer shrimp and asparagus to bowls and garnish with chopped green onion.
