Grilled Chicken Pesto Ciabatta Sandwich





Serves 4 |
The perfect sandwich for lunch or dinner.
Ingredients:
2 chicken breasts, halved lengthwise |
Garlic powder, to taste |
Salt, to taste |
Ground black pepper, to taste |
1 tablespoon olive oil, more for sauteing |
4 ciabatta rolls, halved |
4 slices fresh mozzarella |
1/2 cup pesto |
1 tomato, sliced |
2 cups arugula |
Directions:
- Turn on the broiler in the oven.
- Bring two large pans to medium heat. Pour a small amount of olive oil into one of the pans.
- Lightly season the chicken with garlic powder, salt, pepper, covering evenly.
- Place the chicken into the pan and cook until lightly browned on both sides and the chicken is thoroughly cooked.
- Brush the inside of each ciabatta rolls with olive oil.
- In the second pan, place the ciabatta rolls olive oil side down. Cook until golden brown. Transfer rolls to a plate and spread a generous amount of pesto in the top half of each roll.
- Transfer the chicken to a baking sheet and place a slice of mozzarella on top of each. Place the baking sheet under the broiler and cook until cheese has melted and is bubbling.
- Place the chicken on the bottom bun, lay a few tomato slices on the chicken and top with arugula. Place the top bun on the arugula and enjoy!
