Grilled Chicken Pesto Ciabatta Sandwich

Serves 4 | 

The perfect sandwich for lunch or dinner.

Ingredients:

2 chicken breasts, halved lengthwise
Garlic powder, to taste
Salt, to taste
Ground black pepper, to taste
1 tablespoon olive oil, more for sauteing
4 ciabatta rolls, halved
4 slices fresh mozzarella
1/2 cup pesto
1 tomato, sliced
2 cups arugula

Directions:

  1. Turn on the broiler in the oven.
  2. Bring two large pans to medium heat. Pour a small amount of olive oil into one of the pans.
  3. Lightly season the chicken with garlic powder, salt, pepper, covering evenly.
  4. Place the chicken into the pan and cook until lightly browned on both sides and the chicken is thoroughly cooked.
  5. Brush the inside of each ciabatta rolls with olive oil.
  6. In the second pan, place the ciabatta rolls olive oil side down. Cook until golden brown. Transfer rolls to a plate and spread a generous amount of pesto in the top half of each roll.
  7. Transfer the chicken to a baking sheet and place a slice of mozzarella on top of each. Place the baking sheet under the broiler and cook until cheese has melted and is bubbling.
  8. Place the chicken on the bottom bun, lay a few tomato slices on the chicken and top with arugula. Place the top bun on the arugula and enjoy!
