Caribbean-Style Black Beans and Rice





Serves 4 |
Enjoy the hint of heat and big flavors!
Ingredients:
| 2 tablespoons butter |
| 1 sweet onion, chopped |
| 1 red bell pepper, chopped |
| 1 box black beans and rice mixture, 7 oz. |
| 2 3/4 cups vegetable stock |
| 3 green onions, chopped |
| Caribbean jerk seasoning, to taste |
Directions:
- Bring 2-quart saucepan to medium-high heat. Add the butter and then add the chopped sweet onion and red bell pepper. Saute for about 5 minutes, until the onions are translucent.
- Add the black beans and rice mix into the saucepan. Pour in the vegetable stock and stir well. Place the lid on top and bring to a boil on high heat. Once boiling, reduce the heat to medium-low. Keep the lid on and let simmer for 25 minutes.
- Remove the saucepan from the heat and let rest for 5 minutes with the lid still on.
- Remove the lid, add the green onions and season with Caribbean jerk seasoning. Stir together until well combined.
- Spoon onto serving plates and enjoy!
