Baked Salmon Meatballs





Serves 4 |
Fantastic as a snack or appetizer.
Ingredients:
1 lb skinless salmon, cut into chunks |
1/4 cup panko breadcrumbs |
1 egg white |
1/2 yellow onion, grated |
2 garlic cloves, minced |
3 tablespoons minced cilantro |
3/4 teaspoon salt |
1/2 teaspoon ground pepper |
1/2 teaspoon ground oregano |
1/2 teaspoon paprika |
Directions:
- Preheat the oven to 350° F. Grease a large baking sheet with cooking spray.
- Place the salmon in a food processor. Pulse until finely chopped.
- Transfer the salmon to a large bowl. Add the breadcrumbs, egg white, onion, garlic, salt, cilantro, pepper, oregano, and paprika. Stir until well combined.
- Scoop out 2 tablespoons of the salmon mixture and form into balls. Arrange the salmon balls on the baking sheet.
- Place the baking sheet into the oven and bake for 15-18 minutes, until thoroughly cooked.
- Remove from the oven and let cool for a few minutes before serving.
