Grilled Mexican Street Cauliflower

Serves 4 |
A tasty twist to the all-time favorite.
Ingredients:
1 head cauliflower |
1 tablespoon vegetable oil |
1/4 cup mayonnaise |
1 teaspoon chili powder |
1/3 cup fresh cilantro |
1/2 cup crumbled cotija cheese |
1 lime, quartered |
Directions:
- Preheat grill to medium.
- Remove the leaves and stem from the cauliflower. Cut the cauliflower into 4 thick slices. Brush each side of the cauliflower steak with vegetable oil.
- Place the cauliflower on the grill, close the lid and cook for about 5 minutes, until the cauliflower begins to char. Flip and repeat the process for the other side.
- Transfer the cauliflower to a plate. Brush each side with mayonnaise. The sprinkle the chili powder, fresh cilantro, and crumbled cotija over top. Finish by squeezing a lime wedge over each cauliflower. Enjoy!
