Greek Spaghetti





Serves 6 |
A Mediterranean twist to the Italian favorite.
Ingredients:
1 lb spaghetti noodles |
6 tablespoons extra-virgin olive oil |
4 cloves garlic, minced |
1 1/2 lb Roma tomatoes, seeded and chopped |
3 tablespoons drained capers |
1/2 cup black olives, sliced |
1/4 cup Kalamata olives, sliced |
5 oz feta cheese, crumbled |
Salt, to taste |
Ground black pepper, to taste |
Directions:
- Cook the spaghetti according to directions on package. Drain the water and transfer the pasta to a large bowl.
- Pour olive oil in a saucepan. Bring to medium-low heat. Add the garlic and saut�© for 1 minute.
- Pour the garlic over pasta. Add tomatoes, capers, black olives, kalamata olives, and feta. Season with salt and pepper, then toss together.
- Divide the spaghetti amongst the serving bowls. Enjoy!
