Roasted Greek Roasted Potatoes with Feta and Peppers

Serves 6 |
Easy, wholesome and wonderfully flavorful.
Ingredients:
2 lb gold potatoes, peeled and cut into small cubes |
3 tablespoons olive oil |
1 tablespoon lemon juice |
1 teaspoon salt |
1 red bell pepper, cut into cubes |
1 teaspoon dried oregano |
1 teaspoon paprika |
1 teaspoon garlic powder |
1 teaspoon onion powder |
1/2 teaspoon ground black pepper |
1/4 teaspoon ground cinnamon |
Feta cheese, for garnish |
Directions:
- Preheat the oven to 400° F. Grease a baking tray with cooking spray. Set aside.
- Place the potatoes into a mixing bowl. Add the olive oil, lemon juice, salt and red bell pepper. Toss together until the potatoes are coated and mixed with the bell peppers.
- Pour the potatoes and bell peppers onto the baking tray. Place the tray in the oven. Roast for 25 minutes.
- Combine the oregano, paprika, garlic powder, onion powder, black pepper, and cinnamon in a small bowl.
- Remove the baking tray from the oven. Sprinkle the seasoning mix over the potatoes and bell peppers. Stir with a spatula to coat all sides.
- Return the tray to the oven. Roast for 10-15 minutes, until the potatoes are golden.
- Transfer the potatoes and bell peppers to serving plates. Top the potatoes with Feta. Enjoy!
