Spicy Greek Feta Dip

Serves 6 |
Simple ingredients with big flavors.
Ingredients:
2 red bell peppers |
Red chili flakes, to taste |
1 cup crumbled Feta cheese |
3 tablespoons olive oil |
2 tablespoons red wine vinegar |
Directions:
- Preheat oven to 450° F. Line a baking sheet with parchment paper.
- Cut the bell peppers in half and remove the seeds. Place the peppers cut side down on the baking sheet. Brush the peppers with olive oil.
- Place the peppers in the oven. Roast the peppers for 25 minutes. Remove and let cool.
- Place the roasted peppers, red chili flakes, crumbled Feta, olive oil, and red wine vinegar into a blender. Pulse until smooth.
- Spoon the dip from the blender into a serving bowl. Top with red pepper flakes, if desired.
