Pineapple Teriyaki Chicken Sandwiches





Serves 4 |
Enjoy the flavors of a lūʻau indoors.
Ingredients:
| 4 chicken breasts |
| 1 bottle teriyaki sauce, 12 oz. |
| 3/4 cup brown sugar |
| 4 pineapple slices, from a can |
| 8 slices deli ham |
| 4 slices Pepper Jack cheese |
| 4 hamburger buns |
Directions:
- Tenderize the chicken breasts. Place them in a resealable container.
- Stir together the teriyaki sauce and brown sugar in a mixing bowl. Pour half of the sauce mixture to the container. Close and shake to coat. Place in refrigerator to chill for five hours.
- Pour half of the remaining sauce mixture into a second bowl. Place both bowls in the refrigerator until ready to use.
- Place two large pans on the stovetop and bring to medium heat.
- Open the canned pineapple slices. Reserve some of the pineapple juice.
- Place the pineapple slices in one pan and the chicken breasts in the other. Brush the pineapple slices with one of the bowls of sauce and the chicken breasts with the other. Cook the pineapple until just golden brown then flip and cook to golden brown. Cook the chicken breasts for about 8 minutes per side. Once both are cooked remove from heat.
- Place the deli ham in a pan. Pour in the pineapple juice. Cook over low until warm.
- Place the chicken breasts on the bottom hamburger buns. Then place a slice of Pepper Jack cheese on the chicken breast followed by 2 slices of deli ham, then a pineapple slice. Place the top bun on the pineapple. Repeat to make three more sandwiches. Enjoy!
