Pulled Pork Breakfast Hash

You’ll wish it was morning, all the time.

Ingredients:

2 tablespoons canola oil
2 gold potatoes, chopped
Salt, to taste
Thyme, to taste
Garlic powder, to taste
Ground black pepper, to taste
1 1/2 cups prepared pulled pork
2 eggs
1 green onion, chopped

Directions:

  1. Pour the canola oil into a frying pan. Bring to medium-high heat. Add the potatoes and season with salt, thyme, garlic powder, and black pepper. Cook until potatoes are mostly browned. Then add the pulled pork and cook until the pork is slightly crispy. Push the potatoes and pulled pork to one side of the pan.
  2. Crack the eggs on opposite side. Place a lid on top and cook until the egg whites are firm.
  3. Split the potatoes, pulled pork and eggs among the serving plates. Garnish with green onion.
