Taco Casserole

The classic taco has been upgraded.

Ingredients:

1 tablespoon olive oil
1 lb ground beef
1/2 white onion, chopped
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1 tablespoon chili powder
2 cups crushed Nacho Cheese Doritos
1 can corn, drained, 12 oz.
1 jar prepared salsa, 15.5 oz.
1 can black beans, drained and rinsed, 14 oz.
2 cups shredded Mexican blend cheese

Directions:

  1. Preheat the oven to 350° F.
  2. Pour the olive oil into a skillet and add the ground beef. Bring the skillet to medium-high heat and cook for 5 minutes, frequently flipping the ground beef.
  3. Stir in the onion. Then season with ground cumin, garlic powder, and chili powder. Cook and stir for 5 more minutes.
  4. Sprinkle the crushed Doritos along the bottom of a large casserole dish.
  5. Pour out the liquid from the skillet. Then stir in the corn, salsa, and black beans. Sprinkle half the shredded cheese over top and let sit until the cheese begins to melt.
  6. Spoon the ground beef mixture into the casserole dish. Top with the remaining cheese.
  7. Place into the oven to bake for 15-20 minutes, until the cheese is melted.
  8. Remove the casserole from the oven. Let sit for a few minutes before serving. Enjoy!
