One-Pan Honey BBQ Chicken Rice





Serves 4 |
Easy to make, easy to enjoy, easy to clean up.
Ingredients:
1 lb boneless, skinless chicken thighs |
Sea salt, to taste |
Black pepper, to taste |
2 tablespoons canola oil |
1/2 yellow onion, chopped |
2 cloves garlic, minced |
1 cup long-grain white rice |
2 cups chicken broth |
1 cup BBQ sauce, your preference |
Honey, for topping |
Directions:
- Dice chicken thighs into small cubes. Place into a bowl and season with salt and pepper.
- Pour the canola oil into a large skillet. Bring to medium-high heat. Sear chicken until golden brown, 5-7 minutes. Remove from the skillet. Set aside.
- In the same skillet, saute the onion for 2-3 minutes, then add the garlic, and cook for 1 minute. Then add the uncooked rice and stir together. Cook for 1 minute.
- Pour in the chicken broth and stir until combined.
- Return the chicken to the skillet. Pour in the BBQ sauce and stir together.
- Reduce the heat to low, place a lid on, and let simmer for 20 minutes, until the rice is tender and the liquid is absorbed.
- Remove the skillet from the heat. Fluff the rice gently and allow it to sit for 5 minutes before serving.
- Transfer the chicken and rice to plates. Drizzle a little honey over the rice and chicken. Enjoy!
