Fresh Tomatoes With Angel Hair Pasta





Serves 4 |
A delightfully tangy and slightly sweet pasta dish.
Ingredients:
| 1 package angel hair pasta |
| 4 tomatoes, on the vine, chopped |
| 1/4 cup dry red wine |
| 1/4 teaspoon kosher salt |
| 1 onion, diced |
| 1 tablespoon olive oil |
| 3 tablespoons oregano |
| 1 clove garlic, minced |
| 1/2 teaspoon ground pepper |
Directions:
- Cook pasta while preparing other ingredients. Cook until al dente, drain water and set aside.
- Pour olive oil into a medium saucepan. Bring to medium-high heat. Add onions and saute for 3 minutes.
- Add garlic to pan and sauté for 1 minute.
- Add in ground pepper, tomatoes and salt, cook for 2-3 minutes
- Pour in wine and cook 5-8 minutes. Stirring occasionally.
- Remove from heat, stir in oregano. Serve sauce over cooked pasta.
