Easy Chicken Tortilla Soup





Serves 4 |
Hearty and oh so delicious!
Ingredients:
| 4 cups chicken stock |
| 1 can diced tomatoes with juice |
| 2 tablespoons lime juice |
| 1 can green chiles, un-drained |
| 2 tablespoons cilantro leaves, chopped |
| 1 carrot, diced |
| 2 green onions, chopped, green parts only |
| 3/4 cup corn kernels |
| 1 cup chopped cooked chicken |
| 1/2 cup shredded Monterey Jack cheese |
| Tortilla chips, for serving |
Directions:
- In a large stockpot, simmer chicken stock with tomatoes, lime juice, green chiles, cilantro, carrot, green onions and corn for 45 minutes.
- Add cooked chicken about 5 minutes before done.
- Serve soup in bowls topped with shredded cheese and crushed tortilla chips.
