Mini Roast Beef Sandwiches





Serves 12 |
Small in size, big on flavor!
Ingredients:
| 1 lb roast beef, thin sliced, chopped | 
| 1/4 cup mustard | 
| 1/2 cup walnuts, finely chopped | 
| 1/2 lb Havarti cheese, thin sliced | 
| 12 dinner rolls | 
| 1/4 cup mayonnaise | 
| 2/3 cup peach perserves | 
| Salt, optional, to taste | 
| Pepper, optional, to taste | 
Directions:
- Preheat oven to 325° F.
 - Lightly toast walnuts for 5 minutes in a skillet on medium-low heat.
 - Combine mustard and mayonnaise in a small bowl. Stir until evenly mixed.
 - Cut dinner rolls in half, removing tops from bottoms. Spread the peach preserves on the top halves. Lightly sprinkle crushed walnuts on roll tops.
 - Spread the mayo-mustard mixture on the bottom halves of the rolls.
 - Place cheese and roast beef on bottom halves. Replace the top halves, salt and pepper if desired. Wrap each dinner roll in aluminum foil.
 - Place rolls on a baking sheet, bake for 20 minutes. Remove from oven, let cool before serving.
